I always keep a roll of these in my freezer to have on hand. They are gorgeous, delicious and healthy…You can use my recipe below or be creative and use any of your favorite shelled nuts or toppings. Best of all they take just a few minutes to make and no baking necessary!!
Medjool Date, Pistachio and Coconut Cookies
2 cups pitted Medjool dates (make sure they are fresh and soft)
1 tablespoon coconut oil
1/4 cup shelled pistachios
1/4 cup chopped toasted almonds
1 cup shredded unsweetened coconut
Place the dates in a food processor and process until a smooth “dough” forms. If the “dough” is too chunky, add the coconut oil.
Remove the “dough” from the food processor, and use your fingertips to really work the nuts into the “dough”.
Place 2 pieces of parchment paper on your counter. Divide the “dough” evenly into 2 balls and place one on each piece of paper.
Roll the “dough” into a log, about 10-12 inches long.
Pour the coconut to a large plate. (you can mix in some toasted sesame seeds or crushed rose petals for extra flair).
Roll the log into the coconut, pressing slightly for the coconut to adhere to the outside of the log. Repeat with the remaining “dough”.
Wrap the logs in parchment paper so they resemble a candy by twisting the ends tightly.
Keep in the freezer until ready to slice and serve.
Thaw for 10 minutes on the counter before slicing into 1/2 inch thin rounds.
