Dessert Perfection & only 3 Ingredients!!! I kid you not!
Coconut Granita with Honeycomb & Pomegranate
1- 13.5 ounce can Coconut Milk/Almond milk or 2 cups coconut/almond creamer (for coffee)
Honeycomb or honey
Stir or shake the coconut milk and pour into a square pyrex dish. Place in the freezer for 45 minutes. Remove from freezer and use a large fork to ‘scrape’ the ice into shavings. Return to the freezer for another 45 minutes and repeat. Scoop the shavings into individual serving dishes and place in the freezer until ready to serve (so the dishes get nice and frosty). I suggest martini glasses or miniature mason jars for serving. Before serving: Let thaw on the counter for a few minutes then top with pieces of honeycomb or a good drizzle of honey and sprinkle with pomegranate seeds. That’s it!!
